Distillation Process

 

1. Begin by pouring the neutral grain spirit into your pot still.

 

2. Add a selection of botanicals and fresh ingredients into the spirit. The key botanical in gin is juniper berries, but feel free to experiment with additional botanicals to create a unique flavor profile.

 

3. Heat the mixture in the still and closely monitor the temperature. Gin typically requires a lower boiling point than other spirits, so aim for a gentle simmer around 140-160°C (284-320°F).

 

4. As the mixture vaporizes and condenses, collect the distillate in a separate container. This liquid is your raw gin.

 

5. Taste your raw gin and adjust the flavor by adding more botanicals or fresh ingredients if necessary. Be patient; gin flavors can intensify over time.

 

6. Once you're satisfied with the flavor, dilute the gin with distilled water to achieve your desired alcohol content. This can vary, but a common target is around 40-45% ABV (alcohol by volume).

 

Bottling Your Gin

 

1. Use a fine mesh strainer or cheesecloth to filter out any remaining botanical particles from the gin.

 

2. Sterilize your glass bottles and caps by boiling them or using a sanitizing solution. Ensure they are completely dry before bottling.

 

3. Using a funnel, carefully pour the gin into the sterilized bottles. Leave a small air gap at the top to allow for expansion and contraction.

 

4. Seal the bottles with airtight caps to prevent evaporation and maintain the gin's freshness.

 

5. Store your bottled gin in a cool, dark place. The flavors will continue to develop over time, so be patient and enjoy the aging process.
