- 100 grams paprika

 

Instructions:

 

1. In a large industrial pot, combine the chopped chilli peppers, minced garlic, chopped onions, and red bell peppers. Cook over medium heat for about 15 minutes, stirring frequently.

 

2. Add white vinegar, water, lime juice, sugar, salt, ground cumin, and paprika. Stir thoroughly to ensure all ingredients are well mixed.

 

3. Allow the mixture to simmer over low heat for approximately 40-50 minutes. This allows the flavours to meld and the sauce to thicken to a desirable consistency.

 

4. Carefully transfer the mixture to an industrial-grade blender or food processor. Blend in batches until the sauce reaches a smooth texture.

 

5. Return the blended mixture to the pot and continue to simmer for an additional 20-30 minutes.

 

6. Taste the sauce and adjust the seasoning as necessary, depending on the desired heat level and flavour profile.
